Ingredients

Quantity Ingredient
1 ½ cup Apple Cider
2 cups All-purpose Flour
1 tsp Baking Soda
¾ tsp Baking Powder
1 tsp Cinnamon
1 tsp Apple Pie Spice
¼ tsp Salt
2 tbsp Unsalted Butter, melted
1 (large) Egg
½ cup Brown Sugar, packed
½ cup Granulated Sugar
½ cup Milk, room temperature
1 tps Pure Vanilla Extract
1 cup Granulated Sugar (for coating)
¾ tsp Cinnamon (for coating)
¾ tsp Apple Pie Spice (for coating)
6 tbsp Unsalted Butter, melted (for coating)

Instructions

Step Instructions
Reduce the cider. Simmer the apple cider in a small saucepan over low heat, stirring occasionally, until reduced to ½ cup (120 ml). Start checking after 10 minutes; it may take about 20 minutes. Leave any spices or solids in the cider. Let cool for 10 minutes.
Prepare the pan. Preheat the oven to 350°F (177°C). Grease the donut pan with nonstick cooking spray.
Mix the dry ingredients. Whisk the flour, baking soda, baking powder, cinnamon, apple pie spice, and salt in a large bowl.
Combine the batter. In another bowl, whisk the melted butter, egg, brown sugar, granulated sugar, milk, and vanilla. Add to the dry ingredients along with the cooled, reduced cider. Whisk until smooth and combined; the batter will be slightly thick.
Fill the pan. Spoon or pipe the batter into the donut cavities, filling each about halfway. To pipe with a zip-top bag, fill the bag with batter and snip off one bottom corner.
Bake and cool. Bake for 10–11 minutes, until the tops and edges are lightly browned and the tops spring back when gently pressed. Cool in the pan for 2 minutes, then transfer to a wire rack. Grease the pan again before baking the remaining batter.
Coat the donuts. Mix the sugar, cinnamon, and apple pie spice in a medium bowl. When the donuts are cool enough to handle, dip both sides in the melted butter, then generously coat with the spiced sugar.
Serve and store. Serve immediately for the best texture. Keep leftovers tightly covered at room temperature for up to 2 days or in the refrigerator for up to 5 days.
