Ingredients
| 2 cups | Tree Top 100% Apple Juice |
| 3 pounds | Pork loin roast |
| 4 tbsp. | Olive oil |
| 1 medium | Onion, diced |
| 2 cloves | Garlic, chopped |
| ¼ cup | Honey |
| 1 tbsp. | Dry oregano |
| 1 tsp. | Dry rubbed sage |
| 2 tbsp. | Dijon mustard |
| 1 tsp. | Lemon juice |
| 1 tbsp. | Worcestershire sauce |
| To taste | Salt and black pepper |
Instructions
| Preheat oven to 350°F. | |
| Begin making the glaze by adding olive oil, onions and garlic to a medium-size saucepan and cooking on high heat for 3 minutes. | |
| Add apple juice and cook until 1 cup of liquid remains, about 15 minutes. | |
| While the glaze is cooking, place a large sauté pan on the stove top. On high heat, add 1 tablespoon of olive oil and sear pork on all sides for about 5 minutes. Place in oven and roast approximately 30-45 minutes or until internal temperature shows approximately 135° on the instant read thermometer. | |
| While the roast is cooking, finish making glaze. Add honey, dry oregano and dry rubbed sage. Cook until glaze becomes thick like syrup. | |
| Add the Dijon mustard, lemon juice, Worcestershire sauce, salt and black pepper. Remove from heat and glaze pork 3-4 times during roasting process. |
